This Wagyu cut hangs from the diaphragm along the lower belly of the animal in the plate section. Since this muscle does very little work, it is very tender. There is only one hanger steak per animal.

Alternative Names: butcher’s steak, hanger steak, hanging tenderloin

How to Cook: This cut is best cooked on a hot grill or a searing cast-iron skillet marinated or seasoned.
